Churro Blondies with Dulce De Leche

Churros are one of my FAVORITE treats. I love anything with cinnamon and sugar to be honest. But if there are churros on the menu, preferably served with chocolate and dulce de leche dipping sauce, I am ordering it. These churro blondies with dulce de leche are everything I love about churros but much easier. For one, there is no frying to be done. For two, they come together super quick and you can snack on them for days.

Dulce De Leche:

The first step in this recipe is making the dulce de leche, if you choose to do so. You can also buy it pre-made, but it is really simple to make and all you need is a deep pot and a can of sweetened condensed milk. Simply remove the label from the sweetened condensed milk and place in a pot that is deep enough to cover the can completely with water. Next, bring the water to a boil. Once it is boiling, reduce to a simmer and cook for two to three hours. The longer you cook it, the darker, and deeper flavor your dulce de leche will have. 

Because some of the water will evaporate overtime you will have to add more water during the cooking time to keep the can completely submerged in water. If adding more water, simply bring back to a boil again each time and reduce to a simmer. After two to three hours turn the water off and remove your can carefully using tongs. Allow to cool completely before opening. Your dulce de leche is now ready to use!

Churro Blondies:

My churro blondies with dulce de leche are made with a cinnamon blondie base, topped with cinnamon sugar before baking, and then drizzled with dulce de leche after cooling completely 

Start by melting your butter. Once melted, stir in your granulated sugar and brown sugar to combine. The best part about this recipe, no mixer required. Everything can be mixed by hand. Next add in the egg and vanilla (mexican vanilla is especially delicious if you have any) and mix to combine. In a separate bowl whisk together your all purpose flour, salt, baking powder, and cinnamon. Add to the wet ingredients and fold to combine, being careful not to over mix. 

Pour into a greased and parchment paper lined 8X8 baking sheet. Spread the batter evenly in the pan. In a small bowl mix together one tablespoon of granulated sugar and ½ tsp of cinnamon. Sprinkle over the batter and bake in a 350 degree Fahrenheit oven for 16-18 minutes on the middle oven rack.

Assembly:

Once the blondies have finished baking, remove from the pan and allow to cool completely on a wire cooling rack before slicing. After they have cooled completely, slice into bars. Open your can of dulce de leche and remove about a ¼-⅓ of a cup. Place in a microwave safe bowl and microwave for about 15-20 seconds so it is warm and spreadable. Using a piping bag, or even a whisk, drizzle the dulce de leche over each bar. Enjoy.

Ingredients
  

Dulce De Leche

  • 1 14 oz can sweetened condensed milk

Churro blondies

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

Cinnamon sugar topping

  • 1 tbsp granulated sugar
  • 1/2 tsp cinnamon

Instructions
 

Dulce De Leche

  • Remove the outer wrapping from a 14 oz can of sweetened condensed milk. Place in a deep pot that will be able to completely submerge the can in water. Fill with water one to two inches higher than the height of the can. Bring to a rolling boil. Once boiling bring to a simmer. Continue to simmer for two to three hours. Add more water as needed to keep the can covered.
  • After two to three hours (the longer the boiling time, the darker and deeper colored the dulce de leche will be) remove can with tongs. Set aside to cool completely before using.

Churro Blondies

  • Preheat oven to 350° with the oven rack in the middle position. Grease and line an 8X8 baking pan with parchment paper. Set aside.
  • In a mixing bowl add the melted butter, granulated sugar, and brown sugar. Mix together by hand using either a whisk or a wooden spoon until sugar is incorporated, about a minute. Add in egg and vanilla extract and mix to combine.
  • In a separate bowl whisk together the all purpose flour, salt, baking powder, and cinnamon. Add to the wet ingredients and gently fold to combine, being careful not to over mix.
  • Pour batter into prepared baking pan. In a small bowl mix together the granulated sugar and cinnamon for topping. Sprinkle over the top of the batter. Bake for 16-18 minutes. A toothpick inserted into the center should come out clean and the edges be very lightly golden brown.
  • After a few minutes of cooling, remove the blondies from the pan and allow to cool completely on a wire rack. When cooled completely slice into bars. Place 1/4-1/3 cup of dulce de leche into a microwave safe bowl and microwave for 15-20 seconds until warm and spreadable. Drizzle over each churro blondie. Enjoy!

Notes

Store leftover dulce de leche in an airtight container in the refrigerator and enjoy in coffee, over ice cream, or any recipe you would use caramel!
Churro blondies can be kept in an airtight container for 2-3 days at room temperature.
