Funfetti Golden Oreo Blondies

Although I am definitely a chocolate person over a vanilla person, I have always kind of preferred Golden Oreos. Golden Oreos are sweet and buttery and almost remind me of cake batter. As with pretty much everything in life, one way to make them better is to jam them into a blondie and throw in some sprinkles. For good measure let’s go ahead and top them off with buttercream icing. Seemed like a good idea at the time, and as I am typing this it seems like an even better idea now. These Funfetti Golden Oreo Blondies are over the top indulgent and I wouldn’t have them any other way.

What is a Blondie?

If you have never had a blondie they are very similar to the base of your favorite chocolate chip cookie: buttery, sweet, and chewy. In addition to being delicious, they are also super easy to make. Because we are baking the blondies in a square pan we don’t have to worry about scooping or rolling the dough. Blondies are the perfect base for all your favorite mix ins. In this this recipe we are going to be using white chocolate chips, sprinkles, and Golden Oreos. Talk about a trio.

These blondies come together in a matter of minutes and can be baked in either an 8×8 or a 9×9 pan. I used an 8×8 pan. However, if you are using a 9×9 pan make sure to start with the lowest baking time. Because the 9×9 pan is bigger it will require slightly less baking time. Be sure to let the blondies cool completely before piping on the buttercream icing. I piped it out of a resealable sandwich bag with a small piece of the corner cut off. Similarly, a piping bag would work wonders as well. You could also use an offset spatula to frost the top of the blondies in their entirety, and then top with sprinkles. Anything goes here.

Funfetti Golden Oreo Blondies

Ingredients
  

Blondies

  • 3/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 8 Golden Oreos, roughly chopped
  • 1 tbsp rainbow sprinkles

Buttercream Icing

  • 8 tbsp unsalted butter, softened to room temperature
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 2-3 cups powdered sugar
  • 2-3 tbsp heavy whipping cream

Instructions
 

  • Preheat oven to 350°. Line an 8×8 or 9×9 pan with parchment paper and grease with butter.
  • In a small saucepan melt butter over low heat. Set aside for 10 minutes.
  • Once butter has cooled slightly add butter and both sugars to the bowl of a stand mixture and using the paddle attachment mix on medium speed until light and fluffy, about 2 minutes.
  • Add in eggs one at a time, scraping down the sides and bottom of the bowl between each addition. Add in vanilla extract.
  • In a separate bowl combine flour, baking powder and salt. With the mixer off, slowly add the dry ingredients to the wet ingredients and then mix on low speed until just combined.
  • With a spatula fold in white chocolate chips, 6 of the Golden Oreos, and sprinkles until evenly distributed. Scrape batter into prepared pan and smooth with a spatula. Press the remaining 2 Golden Oreos into the surface of the batter.
  • Bake at 350° for 25-35 minutes until the middle is set and the edges are very light golden brown or a toothpick inserted into the middle comes out clean.

Buttercream Icing

  • While the blondies are baking leave out 8 tbsp of butter to soften to room temperature.
  • Once butter is softened add butter and 1 cup of powdered sugar, the vanilla extract and the salt to a mixing bowl with the paddle attachment. Starting out on low combine ingredients. Once powdered sugar is combined turn up to medium speed and add an additional cup of powdered sugar and 2 tbsp of heavy whipping cream. Continue to whip until fully combined and creamy. Add additional powdered sugar/heavy whipping cream to reach the taste and consistency you prefer.
  • Once blondies are completely cool fill a resealable sandwich bag with icing and cut a small section of the corner off and pipe thin lines across the blondies. Can also frost entirety of blondies if you prefer with an offset spatula. Top with rainbow sprinkles and slice into 12 squares.

Notes

Blondies will remain fresh for 2-3 days in an airtight sealed container.
